Donovan McLagan – Cabal Coffee Roasters in South Africa, AST Accredited SCA Trainer

Donovan McLagan has been in the coffee industry since 2005.

He is the owner of Cabal Roastery and (previously) Urban Espress Coffee Co. in Port Elizabeth, South Africa, and an expert in green coffee, roasting, sensory/cupping, and brewing, as well as roasting and brewing machinery, water quality, temperature profiling, and other technical aspects in the development of green coffee to a high-quality and high-value roasted and brewed product.

Donovan has represented South Africa on the World Cup Taster’s stage four times, winning the Specialty Coffee Association of South Africa National Barista Championship title in 2012, 2015, 2016 & 2018, and is still currently the highest ranked South African on the World Cup Taster’s stage (ranked fifth in the world in 2012). He is also a two-time Eastern Cape Regional Barista Champion in South Africa.

Donovan has a huge passion to share his expertise and teach others, and link coffee farmers with buyers and consumers through personal engagement, teaching, and information sharing. Don is also a coffee technician and is one of 4 coffee professionals developing SCA’s new Coffee Technician Curriculum.

He is a certified international SCA Roast Trainer who puts his heart and soul into every roast and every cup of coffee he makes and ensures his barista’s and students are able to do the same. Don does consulting with Curios Roo in the UK 🇬🇧; Cafe Rider in Dubai and with Tenfold Coffee in Houston, Texas 🇺🇸 as well as other coffee companies in The UAE 🇦🇪 and throughout SOUTH AFRICA 🇿🇦

Description:

Learn about the roasting process, including roast cycles, roast levels, identification and mitigation of defects, physical changes beans undergo during the roasting process, as well as machinery for both roasting and brewing, and workspace management. Online exams are required for both the Foundations and the Intermediate modules and upon passing, students receive their international certification (~180 USD / 1400 Q SCA included), which is of great value especially to contract roasters.

We encourage anyone who is part of the industry, has a firm knowledge of basic roasting skills and has access to a roaster, to attend this training and advance their roasting skills.

Practical Dates:

Practicals will be held the 27th or 28th of November 2021 (maximum of 9 students a day, contact us to confirm your spot) at the Teco Coffee House in Guatemala City.
